ALMOND FRITTERS
2 eggs
1/2 cup sugar
1 1/4 cups very fine, dry white bread crumbs
1 1/4 cups ground almonds
1 teaspoon baking powder
2 1/2 cups milk or white wine
Confectioners' sugar
Beat together eggs and sugar until the mixture is light and creamy. Then mix together the bread crumbs, ground almonds, and baking powder, blending well. Beat the milk or wine into the egg mixture and gradually add the dry ingredients until a rich, creamy batter is formed. Let rest for 2 hours and then, a spoonful at a time, deep-fry in hot fat, like fritters. Dust with confectioners' sugar before serving.
