APPLE BLOSSOM FRITTERS
2 eggs yolks
1/2 cup white wine
1 tablespoon melted butter
1/2 cup flour
1/2 cup very fine, plain, dry breadcrumbs
1/4 teaspoon salt
1/4 teaspoon cinnamon
1/8 teaspoon ground ginger
1/8 teaspoon ground cloves
2 egg whites, beaten fairly stiff
2 cups tightly packed apple blossoms
Beat together the egg yolks, wine and melted butter. Sift together the flour bread crumbs, seasonings and spices, then blend the dry ingredients into the egg-wine mixture. Chill, covered, overnight. Pick the apple blossoms early in the morning, while still fresh and dewy. Just before using the batter, fold in the egg whites. Dip in the batter and deep-fry them in fat heated to 350º.
