| BLACK CURRANT BUNS An old Scottish belief for good fortune in marriage: A bride should be met at the door after the wedding ceremony by her mother, who must then break a currant bun over her daughter's head. For buns: 5 oz plain four 3 oz sugar 3 teaspoons baking powder 1 egg 3 fl. oz milk 3 oz soft vegetarian margarine (e.g. sunflower) 3 oz black currants, topped and tailed For topping: 1 oz sugar 1 teaspoon cinnamon - Preheat oven to 350º.
- Grease and flour 15 deep bun tins.
- In large bowl, mix the flour, sugar, and baking powder. Combine the egg with the milk and add to the dry ingredients with the soft margarine. Beat or process until smooth. Fold in the black currants by hand.
- Spoon the mixture into the prepared bun tines, filling only three-quarters full.
- Mix the caster (granulated) sugar and cinnamon and sprinkle over the top of the buns. Bake for 20 minutes.
