CIRCLETTES
1 cup butter
2/3 cup brown sugar
1 egg, beaten
2 1/2 cups flour
1/2 teaspoon grated lemon peel
3/4 teaspoon ground cardamom
1/2 cup ground almonds
1 cup currants
Cream sugar and butter. Whip in beaten egg. In separate bowl, stir the ground almonds, currants and cardamom into the flour. Add the flour mixture to the sweetened butter . Mix thoroughly.
Chill at least one hour.
Using well-floured fingers, shape the dough into 1" diameter balls, placing them 1" apart on greased cookie sheets.
Bake at 350º for 7 - 10 minutes, or until golden.
