SPICED HONEY CAKE
½ pint boiling water
4 level tablespoons honey
8 oz. plain four
pinch of salt
4 oz granulated sugar
2 teaspoons mixed spice (cinnamon, cloves, etc.)
1 teaspoon baking powder
1 teaspoon baking soda
- Preheat the oven to 325º.
- Boil the water and stir in the honey. Grease and flour a 2 lb. loaf pan.
- Sieve the flour with the salt and add the sugar and spice. Using a wooden spoon, add the melted honey and water, beating until bubbles appear. Stir in the baking powder and baking soda.
- Pour the mixture into the bread tin and bake for about 45 minutes or until a skewer inserted into the loaf comes out clean.
