TEISEN LAP

This simple fruit cake is typical of an everyday cake made in Wales.  'Teisen' is Welsh for 'cake' and 'Lap' means 'moist.'

8 oz. all purpose flour
1 teaspoon baking powder
½ teaspoon ground nutmeg
4 oz butter
1 oz lard
4 oz granulated sugar
4 oz currants
2 eggs
2 tablespoons milk

  1. Preheat oven to 350º
  2. Sieve the flour, baking powder, and nutmeg into a bowl.   Rub in the butter and lard with your fingers.  Stir in the sugar and currants.
  3. Beat the eggs and add to the dry ingredients.  Mix thoroughly and add the milk to give a soft consistency.
  4. Spread the mixture into a greased and floured 8 x 8 pan.
  5. Bake for 20 minutes in the preheated oven, then turn down to 325º for an additional 35 minutes.
  6. Dust with additional granulated sugar.
