TEISEN LAP
This simple fruit cake is typical of an everyday cake made in Wales. 'Teisen' is Welsh for 'cake' and 'Lap' means 'moist.'
8 oz. all purpose flour
1 teaspoon baking powder
½ teaspoon ground nutmeg
4 oz butter
1 oz lard
4 oz granulated sugar
4 oz currants
2 eggs
2 tablespoons milk
- Preheat oven to 350º
- Sieve the flour, baking powder, and nutmeg into a bowl. Rub in the butter and lard with your fingers. Stir in the sugar and currants.
- Beat the eggs and add to the dry ingredients. Mix thoroughly and add the milk to give a soft consistency.
- Spread the mixture into a greased and floured 8 x 8 pan.
- Bake for 20 minutes in the preheated oven, then turn down to 325º for an additional 35 minutes.
- Dust with additional granulated sugar.
