| Recipe for the month of August Canadian Flapjacks  (4 servings)
2 cups flour 2 eggs 1 pinch sea salt 1/2 cup honey 1 and 1/2 cup apple juice or milk 2 teaspoons Baking powder 2 tablespoons oil 1 Pippin apple - grated  This is how I received the recipe, I rarely use any kind of salt when cooking and didn't use any and it came out fine, I have also found using apple juice and honey tastes good but they burn really easy that way, I usually substitute milk and sugar, use less sugar then you would honey though. A great variation on this recipe is to double all the ingrediants except the apple, and to dice up about a pint (measure before dicing) or so of fresh strawberries, and add them with the apple, it tastes really great that way. I cannot get Pippin apples around here often so I usually subsitiute Golden Delicious, or Rome apples, I havn't tried it yet but I think Braeburn would work as well.

Combine all ingredients except apple with mixer. Add apple and mix by hand. Spoon into oiled fry pan, at medium heat. Turn when bubbles appear and harden. Brown other side. Serve immediately with your choice of topping. Honey is good, and maple syrup is good, some like powdered sugar, I prefer maple syrup myself, but they are even great plain.
